I don't think thrust differential would be a good way to hold a spacecraft on course during a mid course burn. Vectored thrust as Elon mentioned is more efficient, quicker reacting & more accurate.
It's easier to hold a rocket engine at a constant thrust & only make slow changes.

Need to deal with thrust asymmetry from flameout of an engine without forcing shutdown of opposing pair engine, which would double thrust loss. Also, thrust differential doesn’t solve roll control well.

Tesla is first American car company to achieve sustained volume production in past ~100 years. Hardest, most painful thing I’ve ever been through, including getting Falcon to orbit.

Assuming fixed vacuum nozzles, would mid-burn pointing and trajectory corrections be done with Starship's methox RCS thrusters? Or are you assuming that the gimballed SL engines will fire concurrently during in-space burns?

Yeah, gimbal SL engines at min throttle for control, so most of impulse goes through vac engines
