You don't form massive sheet steel skins. You'd make it the same way you make spiral-wound pipe; you'd just slowly adjust the diameter.
Spiral winding would be perfect - they could really churn these starships out that way, and each one would have a flawless mirror finish.

Spiral-winding is great for uniform thickness. We used that for the Hyperloop vacuum tunnel. However, Starship skin thickness will vary considerably according to loads.

I have a lot of questions, final one, will future Starship/SH designs look more like the originals ITS designs or are there mostly plans to just scale up the current design and maybe add vacuum optimised nozzles? And thoughts on in-orbit construction?

Engines currently on Starship hopper are a blend of Raptor development & operational parts. First hopper engine to be fired is almost finished assembly in California. Probably fires next month.
